An assemblage of two of the great Chardonnay producing regions of Australia; the Hunter Valley and the Adelaide Hills. The Chardonnay juice went through 100%-barrel fermentation, with the Hunter portion encouraged to ferment wild or naturally, whilst the select parcel of elegant Tumbarumba fruit was inoculated with select Champagne yeast strain to layer mouth feel. Post fermentation the wine was left on its yeast lees in new and old French oak for 12 months prior to it being clarified and bottled. | ||

Sourced from the iconic HSV Vineyard in the Adelaide Hills, the fruit from this single vineyard was picked in the cool of the night, gently pressed and transferred to new fine grain French oak to ferment. After fermentation the wine was batonnaged (lees stirred) for 3 months, left to mature for a further 10 months before being clarified and bottled and allowed to settle before release. | ||

The fruit was crushed and de-stemmed to varying sizes and styles where the fruit was fermented on oak at cooler temperatures which allows the fruit flavours to be nurtured and enables retention of varietal characteristics. Post fermentation the majority of the wine is matured in stainless steel tanks and the remaining is transferred onto French and American oak. The Tempus Two Silver Series Merlot shows deep cherry red with purple hues with delightful aromas of spiced fruit. | ||

Sourced from select vineyards within South Eastern Australia, this modern and contemporary wine is fresh and vibrant. The grapes are harvested at night to retain optimum ripeness. The fruit is then pressed Immediately, clarified and fermented, ensuring the pure aromas and flavours of this grape variety remain. This Pinot Gris has been crafted for immediate drinking. Whilst enjoyable on its own, it is particularly well suited to a variety of dishes from grilled seafood to a roasted chicken with vegetables. | ||
