Winemaking Region: Bellarine Peninsula, Victoria. - Clone: MV6, 114, 115 - Soil Type: Self mulching black vertosol derived from tertiary basalt. - Harvest Date: 06/03/19 to 15/03/19 - Yield: 2.65kg/vine. 2.65tn/acre, 6.6tn/ha, 46hl/ha - Winemaking: De-stemmed to small fermenters with the inclusion of 15% whole bunches and cold soaked for 5 days. Wild ferment at 28 degrees for 7 days. Pressed to barrel for a wild malolactic fermentation. Racked and bottled in June 2019. - Oak Use: Matured in new to 4 year old French barriques for 12 months. - Cellaring: 2022 to 2027. | ||

Tasting note | Deep garnet in appearance with a bright hue, the bouquet is ripe and perfumed with an array of scents ranging from dark cherries and plums to spice. This is complemented by sappy whole bunch notes and cedar oak. The palate is masculine and complex with dense flavours of red plumes, cherries and spice. This flows through to a sappy and earthy mid palate with a long cedar oak finish. Firm acid and fine grain tannins gives this wine wonderful structure which will allow it to age gracefully over the next 8 to 10 years. | |

Wild ferment at 28 degrees for 7 days. Pressed to barrel for a wild malolactic fermentation. Racked and bottled in July 2020. - Oak Use: Matured in new to 4 year old French barriques for 16 months. - Cellaring: Now to 2032. | ||

The wines are labelled with the broader Adelaide appellation for consistency in presentation. Scotchmans Hill winemakers take a hands-on approach to the wine under the HILL label.
